  • 1 refrigerated 9-inch pie crust
  • 6 oz. shredded part skim Mozzarella cheese
  • 4 oz. cooked turkey sausage, crumbled
  • 1/4 c. chopped mushrooms
  • 1 Tbsp. chopped onion
  • 1 tsp. chopped green bell pepper
  • 4 large eggs
  • 3/4 c. low-fat milk
  • 1/2 tsp. salt
  • dash of freshly ground black pepper

Directions

    Preheat oven to 425°.

    Prick crust several times with a fork. Line with aluminum foil and fill with dry beans or pie weights. Bake until lightly browned, 10 to 20 minutes.

    Place crust on rack to cool completely.

    Reduce oven heat to 375°.
