Ingredients

  • 1 refrigerated 9-inch pie crust
  • 6 oz. shredded part-skim Mozzarella cheese
  • 4 oz. crumbled turkey sausage
  • 1/4 c. chopped mushrooms
  • 1 Tbsp. chopped onion
  • 1 Tbsp. chopped pepper
  • 4 large eggs or cholesterol-free egg product equivalent
  • 3/4 c. low-fat milk (2%)
  • 1/2 tsp. salt
  • dash of freshly ground pepper

Directions

    Preheat oven to 425°.

    Prick crust several times with fork. Line with aluminum foil.

    Bake until lightly browned, 10 to 12 minutes.

    Place crust on rack to cool completely.

    Reduce oven heat to 375°.

    Place half the cheese in the baked pie shell.

    Top evenly with sausage, mushroom, onion and green pepper.

    Sprinkle evenly with remaining cheese.
