- 1 refrigerated 9-inch pie crust
- 6 oz. shredded part-skim Mozzarella cheese
- 4 oz. crumbled turkey sausage
- 1/4 c. chopped mushrooms
- 1 Tbsp. chopped onion
- 1 Tbsp. chopped pepper
- 4 large eggs or cholesterol-free egg product equivalent
- 3/4 c. low-fat milk (2%)
- 1/2 tsp. salt
- dash of freshly ground pepper
Directions

1Preheat oven to 425°.

2Prick crust several times with fork. Line with aluminum foil.

3Bake until lightly browned, 10 to 12 minutes.

4Place crust on rack to cool completely.

5Reduce oven heat to 375°.

6Place half the cheese in the baked pie shell.

7Top evenly with sausage, mushroom, onion and green pepper.

8Sprinkle evenly with remaining cheese.
