- 4 Tbsp. oil
- 8 eggs
- 3 Tbsp. water
- salt and pepper to taste
- 1 tsp. oregano
- 3/4 c. tomato sauce or pizza sauce
- 1/2 c. grated Mozzarella cheese
- 1/4 c. grated Parmesan cheese
Directions

1Heat oil in skillet (8 to 10-inch).

2Beat eggs with water, salt, pepper and oregano.

3Pour into skillet and reduce heat.

4Let eggs cook until bottom is firm.

5Lift edges and let uncooked egg go underneath.

6Cook until top is nearly firm.

7Spoon tomato sauce over egg.

8Sprinkle with Mozzarella and Parmesan cheese and cook under broiler until bubbly and melted.

9Serve in wedges, just like pizza!
