- 1 (6 oz.) pkg. hash brown potatoes with onions
- 1 qt. hot water
- 1/2 c. cottage cheese
- 1 c. shredded cheese
- 1 green onion, chopped
- salt and pepper to taste
- 4 to 5 drops Tabasco sauce
- 6 slices bacon, cooked and crumbled or cooked sausage
- 3 eggs
Directions

1Cover hash browns with 1 quart of hot water and let stand 10 minutes; drain.

2Beat eggs.

3Add potatoes and remaining ingredients.

4Pour into well-greased pie plate.

5Cover and refrigerate at least 8 hours.

6Place cold pie plate (uncovered) in cold oven.

7Turn heat to 350° and bake 35 minutes or until potatoes are tender and eggs are set.

8Excellent idea for a brunch.

9Bagels go very well with this dish.
