Breakfast Potato Pie

Ingredients

  • 1 (6 oz.) pkg. hash brown potatoes with onions
  • 1 qt. hot water
  • 1/2 c. cottage cheese
  • 1 c. shredded cheese
  • 1 green onion, chopped
  • salt and pepper to taste
  • 4 to 5 drops Tabasco sauce
  • 6 slices bacon, cooked and crumbled or cooked sausage
  • 3 eggs

Directions

    Cover hash browns with 1 quart of hot water and let stand 10 minutes; drain.

    Beat eggs.

    Add potatoes and remaining ingredients.

    Pour into well-greased pie plate.

    Cover and refrigerate at least 8 hours.

    Place cold pie plate (uncovered) in cold oven.

    Turn heat to 350° and bake 35 minutes or until potatoes are tender and eggs are set.

    Excellent idea for a brunch.
