- 4 8-inch flour tortillas
- 1 cup grated cheddar cheese
- 1 cup grated monterey jack pepper cheese
- 12 cup finely chopped green onion
- 12 lb groud sausage, browned and drained
- salsa (optional)
- sour cream (optional)
Directions

1Brown the sausage.

2Heat grill pan.

3Sprinkle 1/2 cup of each of the cheeses on 2 of the tortillas.

4Top cheese with the onion and browned sausage.

5Place remaining 2 tortillas on top and place on grill pan.

6Cook over low heat 2-3 minutes on each side.

7Remove from heat and cut into wedges.

8Serve with the salsa and sour cream.
