  • 2 tablespoons Land O Lakes Butter
  • 4 cups water
  • 1 cup uncooked steel cut oatmeal
  • 3 teaspoons firmly packed brown sugar
  • Ground cinnamon, if desired
  • 1/3 cup sweetened dried cranberries
  • 1/3 cup coarsely chopped pecans, toasted

    Lightly grease 12-cup muffin pan; set aside.

    Cut butter into 12 squares; set aside.

    Bring water to boil in 4-quart saucepan; stir in oats.

    Cook, stirring occasionally, 30-35 minutes or until oats are softened and water is almost absorbed.

    Divide oatmeal evenly among prepared muffin pan cups.

    Sprinkle each with brown sugar and cinnamon, if desired.

    Top each with 1 butter square; sprinkle with cranberries and pecans, pressing lightly into oatmeal.

    Freeze at least 3 hours or until oatmeal is frozen.

    Remove from freezer; thaw slightly.

    Place individual servings into freezer storage bag; freeze until serving time.
