Ingredients

  • 2 Tbsp. margarine
  • 4 large eggs, beaten
  • f1/4 lb. Velveeta cheese, cubed
  • 3 Tbsp. green onion, chopped
  • 3 Tbsp. mild green chilies, chopped
  • 4 slices bacon, fried and crumbled
  • 2 (6-inch) tortillas, floured

Directions

    Fry tortillas in oil until browned.

    Set on paper towel to drain.

    Melt butter in frying pan.

    In bowl, add all other ingredients except bacon and stir until well mixed.

    Add mixture to frying pan, stirring constantly over medium heat until well mixed.

    Add mixture to frying pan, stirring constantly over medium heat until cheese is melted.

    Put on tortillas and top with bacon. Makes 2 servings.
