- 1 (9-inch) pastry shell, unbaked
- 8 oz. softened Brie cheese, rind removed
- 8 oz. cream cheese, softened
- 4 Tbsp. butter, softened
- 6 Tbsp. heavy cream
- 4 eggs, beaten
- 4 dashes Tabasco sauce
- 1 Tbsp. minced chives
Directions

1Preheat oven to 400°.

2Prick pastry shell and bake 12 minutes. Remove and reduce temperature to 375°.

3Blend Brie, cream cheese, butter and cream.

4Add eggs and blend well.

5Season with Tabasco. Stir in chives.

6Pour into pastry shell and set in upper third of oven.

7Bake 25 to 30 minutes or until quiche has puffed and top is brown.
