  • 1 (9-inch) pastry shell, unbaked
  • 8 oz. softened Brie cheese, rind removed
  • 8 oz. cream cheese, softened
  • 4 Tbsp. butter, softened
  • 6 Tbsp. heavy cream
  • 4 eggs, beaten
  • 4 dashes Tabasco sauce
  • 1 Tbsp. minced chives

    Preheat oven to 400°.

    Prick pastry shell and bake 12 minutes. Remove and reduce temperature to 375°.

    Blend Brie, cream cheese, butter and cream.

    Add eggs and blend well.

    Season with Tabasco. Stir in chives.

    Pour into pastry shell and set in upper third of oven.

    Bake 25 to 30 minutes or until quiche has puffed and top is brown.
