- 1 each pie shell (9 inch)
- 4 tablespoons butter
- 3 slices ham
- 8 each onions green
- 1 cup cheese brie
- 1 cup cheese parmesan, grated
- 4 large eggs
- 2 cups cream heavy
- 1/4 teaspoon nutmeg
Directions

1Preheat oven to 400F (200C).

2Cover pie crust with foil and bake for 10 minutes, then remove foil and bake 5 minutes more.

3Remove pie crust and reduce heat to 325F (160C).

4Julienne ham.

5Chop all of green onions.

6In skillet, saute ham until browned.

7Remove and set aside.

8Saute onion until tender.

9Remove with slotted spoon and combine with ham.

10Spread on bottom of pie shell.

11Spread Brie over ham mixture and sprinkle with Parmesan.

12Combine eggs, cream, and nutmeg, and pour over cheese.

13Bake for 30 minutes or until set.

14Let cool slightly, then cut into wedges and serve.
