  • 4 medium eggs
  • 3 tbsp milk
  • 1/4 red bell pepper, chopped
  • 1/4 small onion
  • 1/2 cup left over chopped brisket
  • 1/4 cup shredded cheese, your choice
  • 3 tbsp salsa, optional

Directions

    beat eggs and milk in small bowl until mixture is well blended

    heat 1 tablespoon oil in nonstick pan

    pour in egg and milk mixture, cook until half set
  4. 4
    add meat, cheese, peppers and onions
  5. 5
    fold over 1/3 , fold again
  6. 6
    cook for one minute, flip, cook for one minute more.

    garnish with salsa if desired

    serve immediately

    goes great with hash browns
