- 4 medium eggs
- 3 tbsp milk
- 1/4 red bell pepper, chopped
- 1/4 small onion
- 1/2 cup left over chopped brisket
- 1/4 cup shredded cheese, your choice
- 3 tbsp salsa, optional
Directions

1beat eggs and milk in small bowl until mixture is well blended

2heat 1 tablespoon oil in nonstick pan

3pour in egg and milk mixture, cook until half set

4add meat, cheese, peppers and onions

5fold over 1/3 , fold again

6cook for one minute, flip, cook for one minute more.

7garnish with salsa if desired

8serve immediately
