  • 1 stick and 1 Tblsp unsalted butter
  • 1/4 cup sugar (I used organic or sugar in the raw)
  • 1/8 cup and 1 Tblsp powdered sugar
  • 1 3/4 cups unbleached flour
  • 1 pinch of kosher salt
  • 2 Tblsp vanilla extract
  • sugar to sprinkle on top

Pat onto small ungreased cookie sheet to approx. 1\/2 inch thickness. With a fork poke a symmetric area of holes into the dough to resemble the appearance of storebought shortbread.
