Ingredients

  • 2 eggs
  • 1 egg white
  • 4 ounces plain flour
  • 12 pint milk
  • 1 pinch salt

Directions

    Put flour into a mixing bowl.

    Crack in eggs.

    Mix in egg white.

    Gradually add milk.
  5. 5
    Pop in pinch of salt.

    Whisk all ingredients together until well mixed,light and fluffy.

    Meanwhile put muffin tin in oven with vegetable oil in the bottom.

    Heat on the highest oven setting until oil smokes.

    Add batter mixture and leave in oven for 20 minutes until crisp and brown and well risen.

    This mixture will fill six large muffin inserts.

    Warning--do not open oven during cooking or they will sink.
