Ingredients
- 2 c. cooked rice
- 2 c. broccoli flowerets or 1 box frozen
- 1 c. water
- 1 1/2 Tbsp. margarine
- 1 1/2 Tbsp. flour
- 2 oz. reduced fat Cheddar cheese
- salt and pepper to taste
Directions

1In medium saucepan, combine broccoli and water.

2Simmer, covered, for about 10 minutes.

3Drain and reserve liquid, adding water if necessary to make 1 cup.

4In small saucepan, melt margarine.

5Blend in flour to form a smooth paste.

6Slowly add the cup of reserved liquid.

7Cook over medium heat, stirring until thickened.

8Add cheese; stir until melted.

9Season as desired. Combine sauce with broccoli and rice.

10Serve as a side dish. Yields 4 servings.
