  • 1 large pkg. chopped broccoli
  • 4 oz. can mushrooms, drained (save liquid)
  • 2 Tbsp. butter
  • 2 small onions, diced
  • 2 cans cream of mushroom soup
  • 2 c. cooked rice
  • 10 oz. pkg. Velveeta cheese
  • Ritz cracker crumbs

Directions

    Cook and drain broccoli.

    Saute onions and mushrooms in butter.

    Add liquid and 2 cans of cream of mushroom soup.

    Add rice and Velveeta cheese and cook until cheese is melted.

    Pour over broccoli.

    Cover with cracker crumbs and butter.

    Bake at 350° for 25 to 30 minutes.
