Broccoli Casserole

  • 1 bunch or 2 (10 oz.) pkg. frozen chopped broccoli
  • 1 can cream of mushroom soup
  • 2 eggs, beaten
  • 1/2 c. mayonnaise
  • 2 Tbsp. minced onion
  • 1 c. grated cheese
  • Town House crackers, crumbled
  • butter or margarine

Directions

    Wash and chop broccoli.

    Cook about 5 minutes in small amount of water.

    If using frozen broccoli, cook according to package directions for 5 minutes; drain.

    Combine beaten eggs, soup, cheese, mayonnaise and onions.

    Fold into broccoli and pour into greased casserole.

    Cover with cracker crumbs and dot with butter. Bake, uncovered, at 350° for 30 minutes.
