Broccoli Casserole

  • 2 boxes chopped frozen broccoli
  • 1 can cream of celery or mushroom soup
  • 1/2 c. mayonnaise
  • 2 well beaten eggs
  • 1 c. grated cheese (from mild to sharp, depending on preference)
  • 1 stack Ritz crackers, crushed
  • 1 stick margarine, melted

Directions

    Cook broccoli according to package directions and drain (no salt).

    Combine eggs and cheese.

    Mix egg mixture with broccoli, soup and mayonnaise.

    Pour into casserole dish (lightly greased). Sprinkle crushed crackers on top and pour melted margarine on crackers.

    Bake for 25 to 30 minutes at 350°.
