Broccoli Casserole

Ingredients

  • 2 (10 oz.) pkg. frozen chopped broccoli
  • 2 (17 oz.) cans green peas, drained
  • 1 can mushroom soup
  • 1 c. mayonnaise
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. grated sharp cheese
  • 1 onion, chopped
  • 2 eggs, beaten
  • 1/2 c. crushed Ritz crackers

Directions

    Cook broccoli according to directions; drain.

    Arrange 1 package in a greased 2-quart casserole dish.

    Cover with peas. Mix soup, mayonnaise, salt, pepper, cheese, onion and eggs.

    Pour half of mixture over broccoli and peas.

    Add remaining broccoli; top with sauce.

    Sprinkle crushed crackers on top.

    Bake at 350° for 30 minutes.

    (Asparagus may be substituted for broccoli.)
