Broccoli Casserole

Ingredients

  • 1 bunch fresh broccoli or 2 pkg. frozen chopped broccoli
  • 1 1/2 c. chopped mushrooms
  • 2 eggs, well beaten
  • 1 can cream of mushroom soup and equivalent amount of mayonnaise
  • 1 1/2 c. grated sharp Cheddar cheese
  • 1/2 c. chopped onion
  • 3 drops Tabasco
  • paprika, salt and pepper

Directions

    Boil broccoli in minimum of water with 1 teaspoon salt and 1/2 teaspoon lemon juice until tender; drain.

    Saute mushrooms and onion with 1 tablespoon butter until tender.

    Combine all ingredients.

    Pour into a 1 1/2-quart greased casserole.

    Top with cracker crumbs; sprinkle with paprika.

    Bake at 350° for 30 minutes.
