- 3/4 cup dry breadcrumbs
- 2 tbsp finely chopped fresh mint
- 2 tbsp grated Parmesan cheese
- 1/2 None lemon, peel finely grated and lemon juiced
- 8 None whiting fillets, or kingfish, skin removed
- 2 oz mixed salad leaves
- 2 tbsp fresh mint leaves
- 8 oz cherry tomatoes, halved
- 1 tbsp olive oil
- None None Lemon wedges, to serve
Directions

1Preheat the oven to 400°F. Line a baking pan with parchment paper.

2Mix breadcrumbs, chopped mint, cheese and lemon peel in a medium bowl. Place fish on prepared pan and season to taste. Top with the crumb mixture.

3Bake for 10-12 mins, or until fish is golden and cooked through.

4Meanwhile, toss the salad, mint leaves and tomatoes in a bowl. Drizzle with the combined olive oil and lemon juice and season to taste. Toss gently. Serve fish with salad and lemon wedges.
