Broccoli Casserole

Ingredients

  • 2 (10 oz.) pkg. frozen chopped broccoli
  • 1 can condensed cream of mushroom soup
  • 1 c. mayonnaise
  • 2 eggs, well beaten
  • 1 c. sharp cheese, grated
  • 4 Tbsp. chopped onion
  • 4 Tbsp. butter
  • 1/2 c. crushed Ritz crackers

Directions

    Cook broccoli for 5 minutes in boiling water.

    Drain well. Combine soup, mayonnaise, eggs, cheese, pepper to taste and onion. Mix well.

    Add broccoli and spoon into a lightly greased Pyrex dish.

    Dot with butter and sprinkle with crushed crackers.

    Bake at 350° for 30 minutes.

    Serves 10.
