- 4 oz. Cheddar cheese, shredded
- 1 c. cooked long grain rice
- 1/2 c. drained canned, sliced mushrooms
- 1/2 c. diced onion
- 1/2 c. skim milk
- 1 Tbsp. plus 1 tsp. reduced calorie margarine
- 2 (10 oz.) pkg. frozen chopped broccoli, thawed (approximately 4 c.)
- 1 tsp. salt
Directions

1Preheat oven to 350°.

2Spray 2-quart casserole dish with nonstick cooking spray and set aside.

3In 3-quart saucepan, combine all ingredients except broccoli and salt.

4Cook, stirring constantly until cheese and margarine are melted.

5Add broccoli and salt; cook, stirring frequently until broccoli is heated, approximately 2 minutes.

6Turn into casserole dish and bake about 30 minutes until mixture is heated and broccoli is tender.
