Broccoli Casserole(Low Calorie)

  • 4 oz. Cheddar cheese, shredded
  • 1 c. cooked long grain rice
  • 1/2 c. drained canned, sliced mushrooms
  • 1/2 c. diced onion
  • 1/2 c. skim milk
  • 1 Tbsp. plus 1 tsp. reduced calorie margarine
  • 2 (10 oz.) pkg. frozen chopped broccoli, thawed (approximately 4 c.)
  • 1 tsp. salt

Directions

    Preheat oven to 350°.

    Spray 2-quart casserole dish with nonstick cooking spray and set aside.

    In 3-quart saucepan, combine all ingredients except broccoli and salt.

    Cook, stirring constantly until cheese and margarine are melted.

    Add broccoli and salt; cook, stirring frequently until broccoli is heated, approximately 2 minutes.

    Turn into casserole dish and bake about 30 minutes until mixture is heated and broccoli is tender.
