Broccoli-Cheddar Egg Bake

Ingredients

  • 4 eggs
  • 1 1/2 c. milk
  • 1 (10 oz.) pkg. frozen broccoli florets or chopped broccoli, thawed and drained
  • 1 (8 oz.) loaf Italian bread, cut into 1-inch chunks (about 4 cups)
  • 1 (4 oz.) jar pimentos, drained and cut into 1-inch pieces (optional)
  • 1 (4 oz.) pkg. shredded Cheddar cheese (1 c.)
  • 1/2 tsp. salt
  • 1/8 tsp. ground red pepper

    In a 2-quart casserole, beat eggs until mixed.

    In a 2-quart glass measure, heat milk on High 1 1/2 to 4 minutes, until steaming.

    Gradually beat into eggs.

    Stir in bread and remaining ingredients, reserving 2 tablespoons cheese.

    With spatula, lightly press bread mixture into egg mixture.

    Sprinkle with reserved cheese.
