Broccoli-Cheddar Egg Bake

- 4 eggs
- 1 1/2 c. milk
- 1 (10 oz.) pkg. frozen broccoli florets or chopped broccoli, thawed and drained
- 1 (8 oz.) loaf Italian bread, cut into 1-inch chunks (about 4 cups)
- 1 (4 oz.) jar pimentos, drained and cut into 1-inch pieces (optional)
- 1 (4 oz.) pkg. shredded Cheddar cheese (1 c.)
- 1/2 tsp. salt
- 1/8 tsp. ground red pepper
Directions

1In a 2-quart casserole, beat eggs until mixed.

2In a 2-quart glass measure, heat milk on High 1 1/2 to 4 minutes, until steaming.

3Gradually beat into eggs.

4Stir in bread and remaining ingredients, reserving 2 tablespoons cheese.

5With spatula, lightly press bread mixture into egg mixture.

6Sprinkle with reserved cheese.

7Let stand 5 minutes.
