Broccoli Cheddar Risotto

Ingredients
- 1 head Broccoli, Cut Into Bite Sized Pieces (1 Head Should Yield About 3 Cups )
- 2 Tablespoons Butter
- 1/2 whole Medium Onion, Finely Chopped
- 2 stalks Celery Finely Chopped
- 2 cloves Garlic, Minced
- 1 cup Arborio Or Risotto Rice
- 1 cup White Wine (or Skip It And Use More Chicken Stock - No Worries!)
- 6 cups Stock (vegetable Or Chicken) Or Stock Mixed With Water - Your Call!
- 1/4 cups Almonds, Toasted And Roughly Chopped
- 4 ounces, weight Grated Sharp Cheddar Cheese
- Salt And Pepper
- Olive Oil, For Drizzling

1Note: This is a two-pan method to save time.

2You can use one pan and cook the broccoli first, drain, then use the same pan for the risotto.

3That will take about 10 more minutes.

5Heat a large pot with 4 inches of water and 1 tablespoon of salt and bring it to a boil.

6Add the broccoli and cook for 90 seconds, then drain off the water.

7Set the broccoli aside.

8Meanwhile, heat a separate large pan to medium heat with 1 tablespoon of the butter.

9Add the onion and celery to the butter and stir to cook for 2 minutes with a sprinkle of salt.

10Add the garlic and cook for 1 minute.

11Add the rice and cook for 2 minutes more, stirring to let the rice become coated in the butter.

12Pour in the wine and let it bubble and reduce.

13If the wine doesnt immediately bubble, turn up the heat slightly.

14When the wine has reduced, add the stock/water one cup at a time, stirring often, until it is completely dissolved.

15Keep adding the stock 1 cup at a time for 25-35 minutes until the rice is cooked through.

16Taste it to be sure!

17Add more salt and pepper as you cook the risotto.

18Remember that youll be adding cheese with lots of salt too.

19When the rice is cooked through, stir in the remaining butter and MOST of the almonds, broccoli and cheese.

20Save a little of each for topping!

21Stir the risotto together and taste one more time for seasoning.

22Serve topped with almonds, broccoli, cheese and a drizzle of olive oil.
