Broccoli Cheese Chowder

- 1 lb broccoli
- 1 medium onion
- 14 cup butter
- 12 cup butter
- 12 cup flour
- 4 cups milk
- 1 cup chicken broth
- 1 12 teaspoons salt
- 2 cups grated cheddar cheese
Directions

1Cook broccoli just until tender, do not over cook.

2Drain and cut into small pieces and set aside.

3Saute chopped onion in the 1/4 cup butter until tender and set aside.

4In a large saucepan or soup pot prepare a white sauce: melt the 1/2 cup butter over medium heat, then stir in flour until well blended.

5Gradually stir in milk, chicken broth, and salt.

6Stir constantly until mixuture reaches a boil.

7Cook 1 to 2 minutes until thickened.

8Add broccoli and onion.

9Stir in cheese.

10cook breifly over medium heat.

11Avoid bringing to a boil.

12Serve immediately or keep warm over low heat.
