- 10 oz. cornbread mix
- 6 eggs
- 16 oz. broccoli, chopped
- 16 oz. cheese, shredded (Velveeta works best)
- 2 large onions, diced
- 1/4 c. butter, margarine or oil (margarine works best)
- 1/3 c. buttermilk
- salt and pepper to taste
Directions

1Cook broccoli 5 minutes, drain.

2Beat eggs until frothy.

3Add cornbread mix, margarine, buttermilk, broccoli, cheese, onion, salt and pepper.

4Stir well; then bake at 350° for 45 minutes.
