Broccoli Cheese Cornbread

  • 10 oz. cornbread mix
  • 6 eggs
  • 16 oz. broccoli, chopped
  • 16 oz. cheese, shredded (Velveeta works best)
  • 2 large onions, diced
  • 1/4 c. butter, margarine or oil (margarine works best)
  • 1/3 c. buttermilk
  • salt and pepper to taste

Directions

    Cook broccoli 5 minutes, drain.

    Beat eggs until frothy.

    Add cornbread mix, margarine, buttermilk, broccoli, cheese, onion, salt and pepper.

    Stir well; then bake at 350° for 45 minutes.
