Broccoli Cheese Twice Baked Potatoes Recipe

  • 6 med. baked potatoes
  • 1/2 c. lowfat sour cream
  • 3 tbsp. butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 green onions, thinly sliced
  • 1 1/2 c. cooked minced broccoli
  • 1 c. shredded Cheddar cheese, divided
  • Paprika

Directions

    Bake potatoes at 425 degrees for 45 to 60 min or possibly till soft.

    Cut a lengthwise slice from the top of the potatoes.

    Scoop out pulp and place in bowl.

    Mash potatoes, add in lowfat sour cream, butter, salt, pepper, onions, broccoli and 3/4 c. cheese.

    Refill potato shells, top with remaining cheese and sprinkle with paprika.

    Bake at 425 degrees for 20 to 25 min till heated through.
