Broccoli Cheese Twice Baked Potatoes Recipe

- 6 med. baked potatoes
- 1/2 c. lowfat sour cream
- 3 tbsp. butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 green onions, thinly sliced
- 1 1/2 c. cooked minced broccoli
- 1 c. shredded Cheddar cheese, divided
- Paprika
Directions

1Bake potatoes at 425 degrees for 45 to 60 min or possibly till soft.

2Cut a lengthwise slice from the top of the potatoes.

3Scoop out pulp and place in bowl.

4Mash potatoes, add in lowfat sour cream, butter, salt, pepper, onions, broccoli and 3/4 c. cheese.

5Refill potato shells, top with remaining cheese and sprinkle with paprika.

6Bake at 425 degrees for 20 to 25 min till heated through.
