Broccoli Chicken Thighs

  • 8 chicken thighs, boned or not boned
  • 2 c. butter
  • 1/4 c. cooking wine
  • 1 Tbsp. peanut butter
  • 1 1/4 c. orange juice
  • 1 Tbsp. orange peel, grated
  • 2 tsp. salt
  • 1/4 tsp. ginger
  • 2/3 c. brown sugar
  • 1 c. sour cream
  • 2 pkg. frozen chopped broccoli, cooked and drained
  • 2 tomatoes, cut into wedges

    Preheat oven to 375°.

    Simmer chicken thighs in butter in a large frying pan for 10 to 12 minutes until somewhat browned.

    Add cooking wine; keep cooking about 5 minutes more.

    Remove chicken to baking pan, skin side up, in a single layer (don't stack).
