Broccoli Chowder

Ingredients

  • 3 1/2 c. chicken broth
  • 1 bunch washed and trimmed broccoli
  • 3 c. milk
  • 1 c. chopped cooked ham
  • 1 to 2 tsp. salt
  • dash of garlic
  • 1 c. light cream
  • 1/4 to 1/2 c. butter
  • 2 c. shredded Swiss cheese

Directions

    Pour chicken broth in kettle; add broccoli.

    Slow boil until broccoli is just tender (10 to 15 minutes).

    Remove broccoli and set aside.

    To broth, add milk, ham, cream, Swiss cheese and butter.

    Coarsely chop broccoli; add to chowder.

    Cover and simmer 15 minutes.

    Add salt and garlic to taste.

    May add a little cornstarch mixed with broth to soup if a thicker base is desired. Feeds 6 (approximately).
