Broccoli-Corn Bake

  • 1 (16 oz.) can creamed corn
  • 2 (10 oz.) pkg. frozen chopped broccoli, cooked and drained
  • 1 beaten egg
  • 1/2 c. coarse saltine cracker crumbs (12)
  • 1 Tbsp. instant minced onion
  • 2 Tbsp. melted butter
  • 1/2 tsp. salt
  • dash of pepper
  • 1/4 c. coarse saltine cracker crumbs (6)
  • 1 Tbsp. melted butter

Directions

    Combine corn, broccoli, egg, 1/2 cup crumbs, onion, 2 tablespoons butter, salt and pepper.

    Turn into a 1-quart casserole.

    Combine 1/4 cup crumbs and remaining butter.

    Sprinkle over vegetable mixture.

    Bake, uncovered, in a 350° oven for 35 to 40 minutes.
