  • None None vegetable or peanut oil, for deep-frying
  • 4 None medium fresh red chilies, 2 sliced, 2 finely chopped
  • 1 cup fresh cilantro leaves
  • 1/3 cup all-purpose flour
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • 2 1/4 lb small whole squid, cleaned, scored, sliced

Directions

    Heat oil to 350°F. Deep-fry sliced chilies until softened. Drain on paper towels. Deep-fry cilantro for 10 seconds. Drain on paper towels.

    Combine flour, remaining chili, salt and pepper. Working in batches, lightly coat squid in flour mixture then deep-fry until tender. Drain on paper towels. Sprinkle squid with fried cilantro and chili.
