Broccoli-Corn Bake

  • 1 (16 oz.) can creamed corn
  • 1 (10 oz.) pkg. chopped frozen broccoli, cooked and drained
  • 1 egg, beaten
  • 1/2 c. coarse saltine cracker crumbs (12 crackers)
  • 1 Tbsp. minced dry onion
  • 1/2 tsp. salt
  • 2 Tbsp. melted butter
  • dash of pepper
  • 1/4 c. coarse saltine cracker crumbs (6 crackers)
  • 1 Tbsp. butter, melted

Directions

    Combine all ingredients except last two.

    Turn into a greased 1-quart casserole.

    Combine 1/4 cup cracker crumbs with 1 tablespoon butter.

    Sprinkle over vegetables and bake, uncovered, in a 350° oven for 35 to 40 minutes.
