Broccoli Corn Bread

  • 1 (10 oz.) pkg. frozen broccoli, thawed
  • 1 box Jiffy corn bread mix
  • 3 eggs, beaten
  • 1 medium onion, chopped
  • 1 c. shredded cheddar cheese
  • 1/2 c. butter, melted
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder

Directions

    Press broccoli between paper towels to remove excess water. Combine corn bread mix, eggs, chopped onion, cheese, butter and seasonings.

    Stir well.

    Stir in broccoli. Pour mixture in greased 8-inch square pan. Bake at 375° for 25-30 minutes or 'til brown.

    Serves 9.
