- 1 (10 oz.) pkg. frozen, chopped broccoli
- 1 c. chopped onion
- 1 c. nonfat cottage cheese
- 1/2 c. liquid Butter Buds
- 4 egg substitutes
- 1 (7 oz.) pkg. corn muffin mix
Directions

1Combine broccoli and onion in glass bowl.

2Microwave, covered, on High for 2 to 3 minutes or until broccoli thaws.

3Add cottage cheese, butter and eggs; mix well.

4Add muffin mix; stir just until moistened.

5Pour into greased 9 x 9-inch baking pan.

6Bake at 400° for 35 minutes or until golden brown.
