  • 1 box Jiffy corn bread muffin mix
  • 4 eggs
  • 1 stick margarine, melted
  • 1/2 tsp. salt
  • 1 (6 oz.) box cottage cheese
  • 1 medium onion, chopped
  • 8 oz. chopped broccoli, cooked and strained

Directions

    Mix eggs, cottage cheese and margarine.

    Add onions and broccoli.

    Add corn bread muffin mix and salt.

    Melt butter in 9 x 9-inch glass pan.

    Bake at 375° for 25 to 30 minutes.

    May be frozen for later use.

    Thaw, then warm.
