  • 1/2 c. diet Parkay, melted
  • 1/3 c. chopped onion
  • 1 tsp. salt
  • 3/4 c. cottage cheese
  • 10 oz. pkg. frozen broccoli, chopped
  • 4 eggs, slightly beaten
  • 8 1/2 oz. pkg. Jiffy corn muffin mix

    Thaw and drain broccoli.

    Combine first 6 ingredients.

    Stir (don't beat) muffin mix.

    Pour in 13 x 9 x 2-inch pan.

    Bake for 20 to 25 minutes at 400°.
