Broccoli-Corn Casserole

  • 1 (10 oz.) pkg. frozen chopped broccoli
  • 1 (10 oz.) pkg. frozen cream-style corn
  • 1 1/4 c. herb-seasoned stuffing mix, divided
  • 1 (10 1/4 oz.) can cream of mushroom soup (undiluted)
  • 1 egg, beaten
  • 3 Tbsp. butter or margarine, melted
  • 1 small onion, finely chopped
  • 1/2 c. (2 oz.) shredded sharp Cheddar cheese

Directions

    Cook broccoli according to package directions, omitting salt. Drain well.

    Cook corn according to package directions.

    Combine broccoli, corn, 1 cup stuffing mix, soup, egg, butter and onion; mix well.

    Spoon mixture into a lightly greased 1 1/2-quart baking dish.

    Sprinkle with cheese and remaining 1/4 cup stuffing mix. Bake at 350° for 30 minutes or until thoroughly heated.
