Broccoli Cornbread

  • 1 stick margarine
  • 1/2 c. chopped onions
  • 1 pkg. frozen chopped broccoli, thawed and drained well
  • 1 (8 oz.) box Jiffy corn muffin mix
  • 4 eggs
  • 4 oz. sour cream

Directions

    Saute together margarine, onions and broccoli.

    Mix together the corn muffin mix, eggs and sour cream.

    Pour muffin mixture over sauteed ingredients into a cast-iron skillet.

    Bake in a 350° oven for 30 to 35 minutes.
