  • 1 (10 oz.) box chopped broccoli, thawed and drained
  • 1 large onion, chopped
  • 2/3 c. small curd cottage cheese
  • 3 eggs
  • 1 stick butter or margarine, melted
  • 1 dash Texas Pete hot sauce
  • 1 box Jiffy corn muffin mix

Directions

    Mix broccoli, onion, cottage cheese, eggs, butter or margarine and hot sauce; fold in corn muffin mix; blend well. Pour into a well greased 8 x 8 pan. Bake at 350° for 25 - 30 minutes or until golden brown. Serve warm.
