Broccoli Cornbread

- 1 1/4 sticks margarine
- 4 eggs
- 2 boxes Jiffy cornbread mix
- 1 (12 oz.) container cottage cheese
- 1 (10 oz.) box frozen broccoli, thawed
Directions

1Preheat oven to 450°.

2Place margarine in 9 x 13-inch aluminum pan; let melt in oven.

3Put cornbread mix, eggs, cottage cheese and broccoli in bowl; mix well.

4After margarine is melted take pan out of oven; pour margarine into cornbread mixture; mix well. Leave a little margarine in bread pan, just enough so the bread won't stick (not enough so you see any standing in pan).

5Cook at 450° for 45 minutes or until golden brown.

6Serve hot or cold.
