- 2 boxes Jiffy cornbread mix
- 2 sticks oleo, melted
- 4 eggs or egg substitute
- 1 onion, chopped
- 8 oz. (1 c.) cottage cheese
- 3/4 tsp. salt
- 1/4 to 1/2 tsp. Tabasco
- 1 pkg. (10 oz.) frozen chopped broccoli, thawed and drained
Directions

1Melt oleo and mix all other ingredients.

2Pour into 9 x 13-inch baking pan.

3Bake in preheated 350° oven for 45 minutes. Leftovers may be refrigerated or frozen.

4Reheat in microwave. Can be baked as muffins.
