  • 2 boxes Jiffy cornbread mix
  • 2 sticks oleo, melted
  • 4 eggs or egg substitute
  • 1 onion, chopped
  • 8 oz. (1 c.) cottage cheese
  • 3/4 tsp. salt
  • 1/4 to 1/2 tsp. Tabasco
  • 1 pkg. (10 oz.) frozen chopped broccoli, thawed and drained

Directions

    Melt oleo and mix all other ingredients.

    Pour into 9 x 13-inch baking pan.

    Bake in preheated 350° oven for 45 minutes. Leftovers may be refrigerated or frozen.

    Reheat in microwave. Can be baked as muffins.
