Broccoli Cornbread

- 1 (10 oz.) pkg. chopped broccoli
- 1 stick margarine, melted
- 1 medium onion, chopped
- 4 eggs
- 6 oz. cottage cheese
- 1 scant tsp. salt
- 1 pkg. Jiffy corn muffin mix
Directions

1Cook broccoli for about 5 minutes in a tiny bit of water and drain.

2Mix in the blender the margarine, onion, eggs, cottage cheese, salt and muffin mix.

3Fold the broccoli into the mixture. Pour into a greased 9 x 13-inch casserole dish.

4Bake at 375° for approximately 25 to 30 minutes.
