  • 1 (10 oz.) pkg. frozen chopped broccoli
  • 1 box Jiffy corn muffin mix
  • 4 eggs
  • 6 oz. or 1 c. cottage cheese
  • 1 tsp. salt
  • 1 stick melted margarine
  • 1 medium onion, chopped

Directions

    Cook broccoli until just tender; drain.

    Beat eggs, cottage cheese and salt together.

    Add mix, margarine, onion and broccoli. Bake in iron skillet or 8 1/2 x 11-inch pan for 25 minutes at 400° to a light brown.
