Broccoli Cornbread

  • 2 sticks margarine or butter
  • 2 pkg. Jiffy cornbread mix
  • 1 (10 oz.) pkg. frozen, chopped broccoli, thawed (not drained)
  • 1 chopped onion
  • 1 (10 oz.) carton cottage cheese
  • 4 eggs
  • 1/2 c. Cheddar cheese, shredded

Directions

    Melt butter in a 9 x 13-inch pan.

    Mix together all other ingredients except Cheddar cheese.

    (Do not drain broccoli.)

    Pour batter over butter.

    Sprinkle with Cheddar cheese.

    Bake at 375° for 30 minutes or until golden brown.
