- 12 cup chunky salsa
- 1 cup drained black beans
- 1 zucchini, shredded
- 14 teaspoon cumin
- 14 teaspoon chili powder
- 8 flour tortillas
- shredded cheese (cheddar, Monterrey jack, Mexican blend)
Directions

1Shred zucchini on a box grater.

2Combine salsa, beans and zucchini.

3Heat pan over medium heat.

4Spread mixture over tortilla, top with cheese and cover with another tortilla.

5brown on both sides (about 4-5 minutes per side).

6You can keep them warm in a 170 degree oven while you cook the rest.
