  • 1 box chopped broccoli
  • 1 large diced onion
  • 6 Tbsp. creamed cottage cheese
  • 3 beaten eggs
  • 1/2 tsp. salt
  • 1 stick softened margarine
  • dash of hot pepper or sauce
  • 1 box Jiffy cornmeal muffin mix

Directions

    Thaw and drain broccoli.

    Mix broccoli, onion, cottage cheese, eggs, margarine and hot sauce.

    Stir in muffin mix.

    Bake at 350° to 375° for 25 to 30 minutes or until golden brown.

    Freezes well.
