Eggplant Casserole

- 1 large eggplant
- 1/2 onion, sliced
- 1/2 tsp. salt
- 1 1/2 c. bread crumbs
- 2 slices bacon
- 1 1/2 c. tomatoes
- dash of red pepper
- 1 c. grated Parmesan cheese
Directions

1Pare eggplant and cut into small pieces. Cook in boiling water with salt until tender. Drain and mash.

2Place bacon in skillet and cook until brown. Add onion; cook gently 15 minutes.

3Add tomatoes and seasonings; cook another 15 minutes. Combine eggplant to tomato mixture. Add 1 cup bread crumbs and 1/2 the cheese. Place in greased casserole dish and sprinkle with remaining crumbs and cheese.

4Bake at 350° for 15 minutes.
