- 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
- 1 large onion, chopped fine
- 1 1/2 c. grated sharp Cheddar cheese
- 1/2 c. melted butter
- 4 beaten eggs
- 1 tsp. salt
- 1 (8 1/2 oz.) box Jiffy corn muffin mix
Directions

1Mix broccoli, onion, eggs, butter, 1 cup cheese and salt.

2Add corn muffin mix; mix and blend thoroughly.

3Pour into a greased 9 x 13-inch casserole dish or a 9 x 12-inch pan.

4Sprinkle the rest of the cheese on top.

5Bake at 400° for 20 to 30 minutes, until mixture tests done.

6Cut into squares and serve hot.
