Broccoli Cornbread

  • 2 boxes Jiffy cornbread mix
  • 8 oz. cottage cheese
  • 1 small chopped onion
  • 2/3 c. milk
  • 4 eggs
  • 1 box chopped frozen broccoli, thawed and drained
  • 1 or 2 sticks margarine

    Melt margarine in a 9 x 13-inch pan.

    Mix cornbread mix, eggs, milk and cottage cheese.

    Add broccoli and onion.

    Stir well. Pour melted margarine into mixture.

    Mix thoroughly.

    Pour mixture back into pan. Cook at 350° until toothpick comes out clean.
