Broccoli-Noodle Casserole

  • 1 (12 oz.) pkg. egg noodles
  • 3 large carrots, sliced
  • 1 (8 oz.) pkg. mushrooms, diced
  • 1 medium onion, diced
  • 2 Tbsp. salad oil
  • 1 1/2 tsp. salt
  • 1 (10 oz.) pkg. frozen, chopped broccoli, thawed
  • 2 c. milk
  • 1 can cream of broccoli soup
  • 1 slice bread, torn in small pieces
  • 1 Tbsp. margarine
  • 2 Tbsp. minced parsley

Directions

    Cook and drain noodles.

    Return to saucepan.

    In skillet with hot salad oil, cook carrots, mushrooms, onion and salt over medium-high heat until tender.

    Stir in broccoli.

    Stir in milk and undiluted soup.

    Heat through.

    Stir soup mixture into noodles.

    Spoon into casserole.
