  • 9 eggs
  • 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
  • 1/3 c. chopped onion
  • 1/4 c. grated Parmesan cheese
  • 2 Tbsp. milk
  • 1/2 tsp. salt
  • 1/2 tsp. dried basil
  • 1/4 tsp. garlic powder
  • 1/4 c. grated Parmesan cheese
  • 1 medium tomato, cut into 6 slices (optional)

Directions

    Beat eggs in a bowl until light and fluffy.

    Stir in broccoli, onion, 1/4 cup Parmesan cheese, milk, salt, basil and garlic powder.

    Pour into ungreased 11 x 7 x 2-inch baking dish. Sprinkle 1/4 cup Parmesan cheese on top and place tomato wedges on top.

    Bake, uncovered, at 325° until set, 25 to 30 minutes.
